sandcastle icecream cake
This is a really easy cake that looks fantastic and the kids will love - icecream is always a favourite.
Simply find yourself a sandcastle bucket - buy a new one because you will never quite get all the sand out of your old favourite and no one enjoys grit between their teeth. Melt a tub of icecream in the microwave until it is soft (like a milkshake). Pour into the sandcastle mould and allow to set overnight.
Place about a cup of coconut in a frypan and toast until a sandy golden colour. Use a little warm water on a cloth around the edges of the mould to encourage the icecream to come out on to a plate. Cover with the coconut. Add some flags for decoration or even some shells (pick up chocolate shells from your supermarket) and you have a very realistic sandcastle!
